-COMMENTS: Red -- Cook cracked eggs with gloved hands and handled ready-to-eat foods with same contaminated gloves. Wash hands and change gloves when gloves have been contaminated. Do not touch personal clothing or body parts with clean gloved hands. Crepes were cooked at 8 a.m. approximately. They were cooling in walk-in cooler with food depth greater than 2 inches. Temperatures measured were 88-90°F. Reduce thickness of pile of crepes when cooling. Blue -- None noted. General -- None noted. Compliance rating: 91 percent.

-COMMENTS: Red -- Two handwashing sinks at front food-preparation area were not provided with hot or cold water, soap or paper towels. All handwashing sinks must be fully operational at all times. Spray bottles of air freshener, bathroom cleaner and sanitizer were found next to food items such as napkins and creamers. Do not leave any toxic chemicals on food counters. Blue -- Sanitizer was not used for dishwasher. Dishwashing has been done without any sanitizing cycle. Floor at bus station was flooded with unsanitary liquid. Floor drains at bus station were not draining properly. Repair is required immediately. Several food workers on schedule did not have their food-handler card for inspection. All food workers including managers must obtain a current food-handler card verifiable any time during business hours. General -- Hot and cold temperatures were good. Compliance rating: 91 percent.

-COMMENTS: Red -- Sausages were kept at make table between 43-52°F. Cover pans and flip foods in pans in order to distribute cold temperatures evenly. Blue -- Four food workers on schedule did not have their food-handler card for inspection. Sanitizer was not injected in dishwashing machine. While waiting for machine to be fixed, dishes must be sanitized manually. General -- Temperatures in walk-in cooler and at salad bar were very good. Compliance rating: 95 percent.

-COMMENTS: Red -- Paper towels were not provided for handwashing at cook line. Blue -- Scoop was kept inside crouton container with scoop handle touching food. Use a long-handled scoop. General -- None noted. Compliance rating: 97 percent.

-COMMENTS: Red -- Dairy products kept in thermos at self-service counter were found between 57-60°F. Cold holding must be at 45°F or below at all times. You may change thermos, reduce the food volume in each device and rotate dairy foods more frequently. Most of all, check food temperatures regularly. Blue -- Repeat violation: Two food workers on schedule did not have their food-handler cards for inspection. General -- Facility very well maintained. Compliance rating: 96 percent.

-COMMENTS: Red -- Cold steamed rice prepared in advance in make fried rice was not properly reheated to 165°F. Temperatures were between 119-130°F. You must reheat foods and check their temperature before displaying at steam table. Food temperatures were not taken as required. Blue -- Repeat violation: Five food workers on schedule did not have their food-handler card for inspection. Ledge inside ice machine needed cleaning and sanitizing on a routine daily basis. General -- Cold holding in walk-in cooler was very good. Compliance rating: 92 percent.

*POINTS KEY: Red violations are those most likely to cause food-borne illness and must be corrected at the time of inspection. Blue violations relate to the overall cleanliness and condition of operation and should be corrected by next inspection. Any establishment receiving more than 35 red or 60 total points is automatically reinspected within two weeks. If an establishment exceeds those limits twice in a calendar year, it is mandatorily closed for at least 24 hours.
